Meet The Chef

Margarita Fernandez, a.k.a “Amores” Chef & Owner of Latin Bites, has spent the last 26 years working in the food industry. Having worked in and owned fast food, casual and fine dining, I learned that to be in this industry, you must love what you do. And I have got to say. It’s my passion.
I learned to cook at a very young age. My parents were my biggest influence, starting with my Mami, who is known to make the best Bistec Empanizado! My Mami, who was born in Ponce, PR, showed me what it was to love to sit at the table with our family and eat together. No matter what was going on, dinner was always served like a feast every night, and you better be sitting at that table with your elbows off the table at dinner time and hungry because you were expected to wipe that plate clean, and oh, did we at times come up with the most fantastic ways to hide our food and make Mami think we ate it, not because it wasn’t good, but because Latino moms serve in abundance!
And then there was Papi, with his Cuban roots walking into the kitchen, making sure to look over his shoulder that Mami wasn’t looking, so he could peak into the pots and toss a bit of cumin and oregano cilantro and hojas de laurel into the food without Mami noticing or there’d be Chancletas flying. There was always a battle on who cooked better! But one thing is for sure. They were both amazing at what they cooked. It was all done with love and passion.
When I finally when out into the world and thought I was a big girl, I worked (and ate) at many different types of restaurants and learned so much about how Latin and European countries cooked. It was the beginning of my love for this industry.
At 24, I moved to Aguada, Puerto Rico, and learned the true meaning of cooking Criollo. Going into the “campo” and picking fresh herbs to make sofrito and pulling out “Viandas” from the ground and spending 3 hours Sunday morning and making Sancocho, just to watch everyone eat till they went into a food coma on Sunday after church.
I come from a family where everyone loves and knows how to cook. They are so good it’s always a competition! It’s great, and I’m blessed because everyone one of them has been an influence on my Latin Bites recipes!
There is nothing more satisfying than watching someone eat the food you put so much love, time & effort into and have them sit back and enjoy every bite and watch them smile. Food makes people happy, and I love making people smile, as it’s what I do best! So come eat, smile, and share the love because, as I always say, “smiles are contagious,” so let’s make this world a happier place together.

Meet Our Team
Rodolfo Villanueva
My name is Rodolfo villanueva. Everyone calls me Roy. I am the proud father of two amazing young ladies. I was born in Aguada, Puerto Rico. We moved to Elizabeth, New Jersey, in 1974, graduated from Elizabeth high school in 1980, and soon after that, I got started in the flooring business. I had my own business in East Brunswick for 22 years. After spending 30 years in the flooring business, I decided to make a change and got into the food industry. We started with one food truck, and right now, companywide, we have 5-foot trucks in a restaurant, and soon a second.
Louis Falcon
My name is Louis Falcon, owner, and operator of Latin Bites Sazón Truck No. 4. After a 20+ year career in merchandising and visual display, I left retail to follow my passion for food. I have always loved the kitchen and serving family and friends at home, so when this opportunity presented itself, I knew it was now or never.
My family is from Puerto Rico, and my fondest memories of my childhood are of cooking in my grandmother’s kitchen, from wrapping pasteles for the holidays to pressing empanadas on Friday nights. Sharing these recipes with our customers has been more than fulfilling and worth every sweat and tear that has gone into starting this small business. I am beyond grateful for all of those that have supported us from day one!
